Ideas for an ethically-sourced seafood menu

National Seafood Month (October) concluded with a celebration of seafood at Minneapolis’ Coastal Seafoods and Fortune Fish & Gourmet in conjunction with the Aquaculture Stewardship Council (ASC).  

Today, more than half of all seafood consumed in the U.S. is raised via aquaculture, also known as seafood farming. The industry has made incredible strides over the last few decades, but not all seafood farming is the same and neither are the certifications thereof. ASC is the only aquaculture certification that can verify seafood is what it claims to be, where it came from, how it was responsibly raised, and how it got into the mouths of your clients. 

For your next event featuring seafood, be certain to ask your catering chefs to specify seafood that has been responsibly raised—and then promote it, too.
